Chocolate Angel Food Cake
- 1 1/2 cups THRIVE powdered sugar
- 3/4 cup cake flour
- 1/4 cup cocoa
- 2/3 cup THRIVE egg white powder
- 1 1/3 cups water
- 1 ½ teaspoons cream of tartar
- 1 cup THRIVE white sugar
- 2 teaspoons vanilla extract
Instructions
Heat
oven to 350⁰F. Sift powdered sugar, flour and cocoa together
in a bowl two times and set aside. Mix egg white powder with water; I like to
do this at least 2 hours to refrigerate the egg whites. Add egg whites and cream of tartar to a
larger bowl and mix on medium speed until foamy. Beat in granulated sugar a few
tablespoons at a time. Turn to high speed and add salt and vanilla. Beat until
stiff and glossy peaks form—do not underbeat!
Sift sugar
and flour mixture over meringue a little at a time and fold in just until
incorporated. Pour batter into ungreased angel food cake pan. Bake for 40
minutes or until cracks feel dry and skewer comes out clean. Turn pan upside
down for about 2 hours before removing cake.
*To use regular egg whites, substitute 1 ½ cups egg whites for the THRIVE egg white powder and water.

Serve plain or with Strawberry Sauce (see recipe below)
Strawberry Sauce
1 1/2 cups THRIVE freeze dried strawberries
3/4 cup THRIVE white sugar
1 teaspoon corn starch
3/4 cup THRIVE white sugar
1 teaspoon corn starch
In a small bowl, cover strawberries with 1 cup warm water. Let sit 5-10 minutes until rehydrated. Drain, reserving 3/4 cup of water.
Combine strawberries, reserved water, sugar and cornstarch in a blender and puree. Heat pureed mixture in a small saucepan over medium heat until thickened (approx. 5-10 minutes). Allow mixture to cool in saucepan. Refrigerate before serving.
